We have been overwhelmed by your support! Thank you to everyone who pledged today. Your generosity has shown that there is room for a small craft gin distillery in Sydney. We will start bottling Batch #1 this Wednesday. For anyone who missed out on Batch #1, but would still like a bottle of Poor Toms Sydney Dry Gin, you can pledge for our first release (Batch %232 and up). We better start distilling, hopefully we can keep up!

A couple of years ago we started making gin on our kitchen table in Sydney’s Inner West. Since then, we’ve spent our savings on a 200 litre German copper still, Jane, and started distilling in a little warehouse up the road. We gathered a small crew of wise locals and invited one of Australia’s most experienced gin distillers, Marcel Thompson, to join our team, and Poor Toms Gin was born!



Poor Toms Gin is copper distilled in small batches in Marrickville, Sydney. We are committed to creating an unconventional, irreverent, and world-class product. That’s why we’re the only distillery in town devoted purely to making gin.



Our Sydney Dry Gin is made from Australian wheat spirit distilled with ten botanicals, and features fresh green apple, native strawberry gum, and chamomile.


Why gin?

Sydney is the perfect place for a sunset g&t or a late-night martini. We, like many people in this town, like to drink locally made booze. We were surprised to discover then, that there are no distilleries in Sydney dedicated purely to making gin.

The flavour possibilities for gin are endless. If you distill a pure white spirit with juniper berries, citruses, spices, and herbs, and get something that's delicious and balanced out the other side - that's a gin. How you choose to balance those flavours and what ingredients you select, is all up to you. It is this freedom to create something original that attracted us to gin.

We wanted to make a product that reflected the smells and tastes of the city we love. That's why we've called it Sydney Dry Gin. We spent months perfecting this product, trialling over 100 individual distillations. With Marcel's help we have made a gin that is an idiosyncratic expression of who we are and the city we live in.




Who we are

Marcel holds a Bachelor’s degree in chemistry and an MBA. His first gig was as an assistant distiller with United Distillers NZ in 1987 (before Griff and Jesse were born) using stills made in the 1940s. He was apprentice to some of the legends of Australasian gin making, whose lineage can be traced back to the giants of the game in pre-war London. Marcel has done everything from operating the stills to overseeing full scale production and R&D. There is little Marcel has not made but his main passion was always for gin (Gordon's and Tanqueray among others) and vodka for local and international consumption. He went on to work in new product development, packaging operations, distribution, franchising, and joint venture arrangements both in Australia and abroad. One of his claims to fame is bringing Dark and Stormy into the 1990s spirits world. We have invited Marcel out of his self-imposed exile to rediscover one of his first loves, making gin stills sing!

Jesse studied economics at uni, then went to work for a merchant bank in the city. His consumption of gin became proportional to his boredom at work. So he cut out the middle man and decided to make the stuff.

Griff has been drinking gin since his dad gave him his first sip of g&t when he was five years old. He is an actor (which really means he works in bars and pubs) - the Shakespeare nerds out there might have already guessed where the name Poor Toms comes from.

Sadly, our first release through Pozible is not available to supporters outside Australia.

It is against the law to sell or supply alcohol to, or to obtain alcohol on behalf of,  a person under the age of 18 years.

All deliveries of Poor Toms Gin must therefore be received and signed for by a person over the age of 18 years. We are unable to post to PO Boxes.

How The Funds Will Be Used

The journey from our kitchen table to a production ready distillery has not been cheap. We have already raised some funds to get us to this point - this has enabled us to develop a delicious gin, design an awesome label, prepare our warehouse, and obtain the numerous licences required. Your support now will go directly towards paying for the first production batch of our Sydney Dry Gin. For your generosity, you'll get gin!

The Challenges

The biggest obstacle right now is raising the funds to produce our first production batch.

Then, the big challenge will be getting as many  Australians as possible to drink Poor Toms - responsibly of course. We think that once people try it, they will come back for more.

Beyond that, running a distillery is not the simplest day job. Luckily we have assembled a team of business heads to advise us and nudge us in the right direction.
