This is a love story

It’s the love for a place where melting snow filters through an ancient granite range and rises up to our land to form a natural spring.  The spring provides us with the crystal clear water that makes our spirit so unique.

It’s the love between a boy and a girl who have chased their passions together for over 25 years and continue to do so by building Swiftcrest Distillery together.  It’s the love for our family where we’ve all been involved.  This distillery has been made by hand, made by us. We are Hank and Carrie Thierry and daughter Belle.

It’s the love for our environment, we run ethically and sustainably.  We are off the grid and use solar power and wood as our renewable energy sources.  We gather deadfall timber from our property to run a wood fired boiler that provides the steam to heat our stills.  The boiler also drives our 130 year old steam pump that moves the water around our distillery.  We are set on 120 acres and for the past 17 years we have kept our property chemical free. We have allowed the trees to regenerate and continue to create a carbon sink that more than offsets the deadfall timber we use.

It’s the love for a craft where time proven skills learnt from some of the best distillers in the world have been passed down to us.  We have sourced the best copper whisky still from a craftsman in Tasmania and our vodka moonshine still comes from Kentucky, USA.

It’s the love for our spirits, we are a small family distillery striving to make the best spirits in the world from the best biodynamic and organic ingredients we can find. We source our grain directly from the farmer.  We are hands on from the milling of the grain to placing the labels on the bottles. We see small as a big advantage.  Our attention to detail and passion for our spirits makes every drop truly unique and of the highest quality. We have an aim and a belief that we are creating something special, a true testament to the craft of small batch micro distilling.

Our Sipping Vodka

Four-times-distilled, this is a full-bodied vodka reminiscent of traditional Eastern European grain style vodkas. The character of the organic/biodynamic grain shines through in our vodka, it has a slight sweetness with hints of Rosemary and citrus, clean and smooth tasting on the palate.  This Vodka is perfect for sipping neat or on ice. Makes a superb Rosemary Vodka Gimlet.

Our Vanilla Bean Vodka

Using our Four-times-distilled Sipping Vodka, we infuse the vodka with an Organic/Biodynamic Vanilla Bean grown here in Australia by @vanilla_australia. Our friends Russell and Mary are Australia's first and finest vanilla growers with their Vanilla beans having four times higher vanillin content than anywhere else in the world! It is our Friday after work go to, we drink it in a shot glass with a small block of ice. Makes a great Espresso Martini.

Our Alpine Spring Gin

Four-times-distilled, our Alpine Spring Gin is as it sounds, the flavour is clean and bright. We are based at the foothills of Mt Buller and our natural spring water filters through an ancient granite range before it rises up to our property. Our pure clean spring water and the use of all organic botanicals including Juniper, Coriander, Cinnamon as well as native Strawberry Gum, Aniseed Myrtle and Lemon Myrtle makes for a premium Gin, refined and balanced in flavour.  

Our Dutch Apple Pie Moonshine

Apple Pie Moonshine has been a staple spirit in the Appalachian Region  of the United States since the late 19th century. We pay homage to our vodka/moonshine still "Sue"(she was made in Kentucky)  by creating our Dutch Apple Pie Moonshine. Why Dutch? Hank's folks emigrated form the Netherlands to Australia in the late 1960's.  Oma brought with her the family Dutch Apple Pie Recipe handed down through the generations.  This same recipe ingredients are used to make our Dutch Apple Pie Moonshine with one exception, it is sweetened with local raw honey. If you like the pie, you will like the shine!

By pledging to buy a bottle from our first batch of delicious Sipping Vodka, Vanilla Bean Vodka , Alpine Spring Gin or Dutch Apple Pie Moonshine not only will you be receiving spirits that are truly unique and of the highest quality, you will be supporting our little family and letting everyone know that with hard work, a little help from your friends and the support of your community, anyone can make their dreams come true.

We have reached our final step, our last hurdle.  We have spent the last four years getting our distillery operational, sourcing ingredients and testing recipes, but to move forward we need to finish building and install our malting machine, buy barrels, buy grain and get spirit into bottles, so we can get them to you. Once we hit our target we will be investing in Australian Native botanicals such as Strawberry Gum, Lemon Myrtle , Aniseed Myrtle as well as Juniper trees to plant here on our beautiful property.

The Challenges

Our biggest challenges are raising the funds to produce our first batch and letting people know our little distillery is here.

We have always said, we have big dreams, but small ambitions. We don’t want to be the biggest, but we do want to be the best little distillery in the world. We would love your help and we would love for you to share our story with others.

The When and How

We expect to have our first batch of each spirit ready in January with subsequent batches from February onwards. Due to our licencesing conditions you will be emailed an individual redemption code for your pledge redeemable at swiftcrest.com.   At this time you will be able to place your order and will be given the option to either collect purchases directly from the distillery (Complimentry Distillery Tour Included) or you may choose to pay a delivery fee of $15.00 per bottle and any purchases will be mailed out to you.  We will keep you up to date with our progress and will be sure to let you know when we have  Distillery Tour dates available.
