Billy Stitch Distillery

Established in February 2023, the Husband and Wife team, Dave and Steph, started Billy Stitch Distillery in a backyard shed (and the rest of the house if you ask Steph) in Baldivis, WA. They began attending local farmer's markets gathering feedback on their creations. 

In the first few months of operation, six original gins were entered into the 2023 San Francisco World Spirit competition. They received multiple awards with the most noteworthy receiving 'Best in Class' for their contemporary Berry Mojito Gin. In 2024 their Summer Gin received a Gold in the London Spirit Competition and Double Golds once more at the 2024 San Francisco World Spirit Competition. In 2024, Billy Stitch was also awarded the Australian Small Business Champion Award for 'Best New Retail Business'. 

In August 2023, an industrial warehouse was leased and a liquor licence was granted. Billy Stitch now has 6  employees to supply their products to over 200 venues across Australia. 

Their next move is to establish a Cellar Door in Medina, located in the city of Kwinana. 

The cellar door will be situated in the Medina industrial area near the golf course. It is currently known as the Labyrinth, where potter and artist Rob Cripwell has created a standing work of art. "We don't know what possessed Rob and Jess to decorate the place so beautifully, but it's a good fit for Billy Stitch!".

The cellar door will offer food, Billy Stitch spirits, and a relaxed atmosphere.  White and dark spirit-making classes, pre-mix making classes will also be offered in the the future. 

Dave and Steph hope the venue will be a welcoming and unique location for the community to relax, learn and enjoy some of the offerings south of the river. 

Current Products

Billy Stitch is a little over a year old with 6 gins, two premix cans and a few other products in the pipeline! 

Berry Mojito and Fingerlime Soda Gin Tin (8%ABV)- Worldwide multi-award winning Berry Mojito Gin mixed with fingerlime soda at 8%. Light and fruity, this is our best-selling product and it will be on tap at the cellar door. 

Summer Gin and Pacific Tonic Gin Tin (8%ABV)- This is how a gin and tonic should taste. Refreshingly light with a hint of bitterness.

Berry Mojito Gin (50%ABV)-  This is a juniper-forward gin with tastes of sharp berries, cream and a mint finish. Botanicals include Juniper, Coriander, Orris Root, Grapefruit Peel, Cranberry, Raspberry, Peppermint, and Chamomile Flowers. 

Dry Gin (50%ABV)-  This is a juniper-forward traditional Gin with a pepper finish. Botanicals include Juniper, Coriander, Orris Root, Angelica Root, Lemon Peel, Cassia Bark, Cardamom, and Szechuan Pepper. 

Summer Gin (50%ABV)- This is a juniper-forward floral Gin with a lemon-lime sweetness. Botanicals include Juniper, Coriander, Orris Root, Grapefruit Peel, Lemon Myrtle, Jarrah Honey, Camomile Flowers, and Cassia Bark. 

Orange and Cassia Gin (50%ABV)- This is a juniper-forward simple Gin with a candy orange start and a spice finish. Botanicals include Juniper, Coriander, Orris Root, Orange Peel, and Cassia Bark. 

Atypical Apricot Gin (50%ABV)- This is a contemporary Gin with a balance of spices, herbs, citrus and sweetness. Botanicals include Juniper, Coriander, Orris Root, Lemon Peel, Apricot, Cardamom, Ginger, Rosemary, and Nutmeg. 

Galaxy Gin (50%ABV)- Galaxy Gin is our Orange and Cassia Gin steeped in Blueberries, Blackberries, Raspberries, and Strawberries. Pair with lemonade and a slice of fresh orange. It is sweet, summery, fruity, and refreshing. It is pink and sparkly!

Future Products

We are experimenting with a lot of spirits at the moment. In the near term, we are looking to create some other white spirits to add to the range including vodka, and a few more Gins. We'll also add some new pre-mix flavours.

In the far future, we will have some aged spirits of all varieties, Dave would like to hear your thoughts on what flavours they should concentrate on!

Under the Liquor Control Act 1988, it is an offence: to sell or supply liquor to a person under the age of 18 years on licensed or regulated premises; or for a person under the age of 18 years to purchase, or attempt to purchase, liquor on licensed or regulated premises. "When we found this property we were not looking for a cellar door. A local council member for the City of Kwinana suggested that we should look at a few buildings in the local area and took us on a little tour. As soon as we walked into the property we knew we had to set up there!

As the budget is tight we will open with the minimum work to get us compliant with State and National Laws and to make it a little comfy. $10K is required to fit out the kitchen and make it safe to serve food. $10K is required to furnish the place so we're not sitting on the floor. Anything extra will go towards the opening party!"
